Move over, Prosecco! There’s a new Italian sparkling wine in town.
While Prosecco is tasty and inexpensive, Trentodoc, the name for the style of Italian sparkling wine from the Trentino region, is a classier, more elegant cousin to the popular varietal. Trentodoc is made in the same metodo classico style as fine French Champagne. This style means that the wine goes through a secondary fermentation in the bottle.
